No Bake Chocolate Cookie Balls – Quick and Easy
Sometimes my daughters just want to play around in the kitchen and bake. Using the oven just isn’t always an option during these moments of inspiration in the kitchen, especially when I can’t supervise the action.
Easy Independent Recipe
Never fear, there is a no-bake chocolate cookies they can make – and you will love how easy they come together. This easy, no-bake recipe is awesome for kids to make independently. They feel very accomplished after they make these delicious little cookie balls.
Ingredients for No Bake Chocolate Cookie Balls
- 6 oz. (1 cup) semi sweet chocolate morsels
- 3 teaspoons corn syrup
- 1 tablespoons instant coffee powder (We used Folgers Coffee crystals, don’t want to buy a big jar? Purchase coffee crystal in individual sticks (7 to a pack for $.99) in the coffee aisle.)
- 1/3 cup hot water
- 3 cups sifted confectioner’s sugar
- 3 dozen finely crushed vanilla wafers (We crushed ours in a zipper bag, or you could use a food processor)
- Additional confectioner’s sugar for rolling (We used coconut on a few of the cookie balls – the kids don’t like it but I do!)
Let’s Get Started!
- Gather all your ingredients and measuring tools, you will also need a large bowl that will fit in your microwave. (A)
- In a microwave melt chocolate bits. (B) We melted our chocolate in 30 second intervals, stirring each time.
- While the chocolate is melting, stir in the coffee crystals into the hot water and let it dissolve (C)
- Crush vanilla wafers in a zipper bag or food processor (D & E))
- Stir in corn syrup, hot coffee water, sugar and crushed vanilla wafers (F)
- Shape into one inch balls with hands and roll in confectioner’s sugar, coconut or sprinkles (G) We used a cookie scoop to measure out the batter (H)
- The No Bake Chocolate Cookie Balls will firm up over the next 24 hours. It is recommended that let them stand for one day before serving but we couldn’t wait! We taste tested ours about 2 hours after we made them and they were great! You can store them in a covered container and let stand for at least one day before eating.
